
Tofu Pancake

100g Tofu
40g Wholewheat Spelt Flour
1 Tbs Cornstarch
1 Tbs Dojenjang
1/2 - 1 Tbs Gochujang
1 Spring Onion, cut into rings

Crumble the Tofu into small pieces. Add the remaining ingredients and knead everything together until everything is mixed together.
Form little Balls and press them down so that you get little fritters.
In a non-stick frying pan heat a little bit of oil and fry the little pancakes until cooked through and slightly brown.

You can adjust the amount of the Paste to your liking. If you do not like it spicy, increase the amount of soybean paste.
You can also add thinly cut pepper or koriander.
If you prefer it a bit more crispy you can also put them into an airfryer
